Reesie's chili chicken


1 lb ground chicken
1 15.5-oz can white chili beans in chili sauce
1 10-oz can mild green chili enchilada sauce
1 4-oz can fire roasted diced green chilies
1 15-oz white kidney beans, drained and rinsed
1/4 cup diced purple onion
1/4 cup diced green pepper
1/4 cup diced red pepper
1 T Worcestershire sauce
1 T minced garlic
1 packet of dry chicken taco seasoning mix
2 cups chicken stock
1 cup Mexican shredded cheese


Brown ground chicken and when almost done add in your vegetables. I find it nice to use red pepper in this because it adds some great color since the sauce is white. Sauté until soft. Next add in your green chilies, both types of beans, and the taco seasoning packet. Stir until combined well. Next add in one can full of water using the empty bean can. Last add in the chicken stock and the shredded cheese.

I thought of creating this recipe because it has been so cold out in South Dakota. This is similar to a beef chili, but just different enough to be fun. Another option for an add in is 1 cup of frozen corn. Serve this chili with a nice corn bread or even on top of hot dogs or brats. This would be a great addition to your Super Bowl party.
