4 eggs
1/2 c canola oil
3/4 c white sugar
3/4 c brown sugar
1tsp vanilla
1 1/2 tsp baking soda
3 3/4 c flour
1/2 tsp salt
2 tsp cinnamon
1 granny apple peeled and diced small
2 c shredded zucchini
Topping ingredients
1/4 c brown sugar
1/4 c flour
2 T butter, cold
Directions
- Preheat oven to 350 degrees. Spray two 9x5 loaf pans.
- Mixed together eggs, oil, sugars, and vanilla.
- In a separate bowl, mix together flour, baking soda, salt, and cinnamon.
- Stir in flour mixture with sugar mixture. Be careful not to over mix.
- Next stir in zucchini and apples.
- Pour into 2 pans. Bake for 40 minutes.
- While baking, mix together topping ingredients. Cut in butter until mixture is crumbly.
- When 40 minutes are up, remove from oven and sprinkle with topping mixture. Bake for an additional 10 minutes or until toothpick comes out clean.
- Cool for 10 minutes, then remove loaves from pan and transfer to wire rack to cool completely.
